Compared with traditional high-temperature frying, low-temperature vacuum frying combines low-temperature cooking and vacuum technology, which can greatly reduce the absorption of oil in the product, retain nutritional value, and more easily maintain the natural color and flavor of the finished product, and the finished product is more crispy.
Low-temperature vacuum frying can effectively remove moisture from the product to make its surface crispy, reduce the loss of color, aroma and taste of the product due to overheating, and significantly reduce the amount of oil absorbed by the product. Processing under vacuum can reduce or even avoid the harm caused by oxidation, such as fatty acid rancidity, enzymatic browning or other oxidative deterioration. Due to low-temperature frying, the formation of acrylamide (a suspected carcinogen) is significantly lower than traditional atmospheric high-temperature frying.
In general, low-temperature vacuum frying technology can provide healthier and more delicious fried food product options, while also reducing some of the adverse effects associated with traditional frying.
