Introduction

In recent years, the main method of betel nut drying is hot air drying. But a recent study by the College of Computational Agriculture found the latest method suitable for drying betel nuts. In order to explore the characteristics of microwave dried betel nut and its effect on quality, using fresh betel nut as a test sample and hot air drying as a control, the betel nut drying curve and rehydration curve were studied. Effects of sugar and polyphenol content. The results show that low-power microwave drying has better rehydration quality than high-power microwave, and at the same time, the nutritional components are also well preserved. Therefore, low-power microwave drying is a method that can replace hot air to dry betel nuts in the future.
